How to Make Plant-Based Tuna Salad
For the last several years, I’ve been proud to call myself a vegetarian. However, given that I have a few intolerances to some foods, it was too difficult to completely call myself a vegetarian, so instead, I chose to continue to eat fish & be a pescatarian. Well, at the beginning of 2020, I said enough is enough! I’m perfectly capable of cutting fish from my diet, I can do this! And I did.
Unfortunately, one thing I was struggling with was figuring out what to make for lunches. One of my go-to proteins while I was eating fish was tuna, and boy did I miss it, but I knew I wanted to stick to my new no-fish rule, and after seeing Seaspiracy, there was absolutely no way I was going to bring that back into my diet. So, I decided to give vegan tuna salad a try, and I quickly fell in love, so today, I’m sharing that recipe with all of you!
Vegan Tuna Salad
Yields Approx. 3 Sandwiches
Ingredients
- 1 can of Chickpeas or White Beans
- Half of a Large Red Onion
- 2-3 ribs of Celery
- 2-3 tbsps of Vegan Mayo
- Juice of Half a Lemon
- Salt + Pepper to taste
- 1 Sheet of Nori (Optional)
Directions
- Open and drain the can of your beans of choice, and pour into a medium sized storage container. Using a masher, mash the beans until they are a texture you want (I like to leave a few semi-whole beans for texture).
- Scoop in your vegan mayo — I recommend you start with less, mix & then add more if you want), the lemon juice and mix everything together. If you want to add nori to give a more "fishy" flavour, chop it up finely and add it in at this step.
- Dice up half of a red onion & chop 2 to 3 ribs of celery. Add to your mixture of beans, mayo, lemon & nori.
- Spread your desired amount of "tuna" salad onto some bread for a sandwich, or onto a piece of romaine lettuce to make a "tuna" lettuce boat as a low-carb option. Enjoy!
This is one of my favourite things to make for lunch during the warmer months, since it’s delicious, filling, so easy to make & a nice cool option that I don’t have to cook.
