The Best Recipes I’ve Found Online


I know we’ve all been there – trying to come up with ideas of what to have for dinner, and then you spend a ton of time scrolling through Pinterest, trying to find a recipe that will make everyone happy while also being not only yummy, but pretty healthy. Let’s be honest, that’s probably 99% of the people reading this blog on a nightly basis, because lord know it’s 100% me. I never know what to make, or quite honestly, even what I want most of the time.

This all being said, because I’ve done my fair share of scrolling through the internet trying to find some yummy recipes to make for dinner, or to be frank, even just for snack or light dinner, depending on how hungry I am, I wanted to share with everyone what I consider to be the best recipes I’ve found online:


Mushroom & Kale Gnocchi

Would this be a blog by me if I didn’t include something related to Jillian Harris? Probably not. But in all honesty, as much as I do love my girl Jillian, this recipe caught my eye because I’m a total mushroom obsessed weirdo. I also love anything in a cream sauce, so the combination of mushrooms and a cream sauce in one recipe, plus potato pasta!?! This recipe spoke to my soul. If you’re not a fan of kale, you can easily swap the kale for another leafy green like spinach, but coming from someone who isn’t a huge fan of kale and used it, I have to admit it was extremely delicious. I’d just let it simmer down for a while so it’s not as rough. The recipe is also vegan, but you can easily swap the vegan ingredients for the “regular” ingredients like milk, or cheese.

This recipe, as you can see, isn’t exactly a dinner recipe, but I had to include it in this list because it is so good. Fun fact, chickpeas make me outrageously itchy, so I’ve lived my entire life not being able to enjoy a good hummus without my skin getting super itchy and uncomfortable. So when I found this recipe, I knew I had to give it a shot, and boy am I obsessed. The recipe, does in fact call for chickpeas, but I actually opt to use white beans, and though it isn’t as pasty in texture as a typical hummus, I’m obsessed with it. I love to have some crackers & veggies with this as a light lunch or dinner when I’m not super hungry, or even as a snack. I will warn you though, the two cloves of garlic makes this recipe very strong as far as the garlic taste goes, so if you’re not a fan of lots of garlic, I’d either only use one, or maybe even less.

Oh man, I’m practically drooling just looking at this photo. If you’ve never had shakshuka, I promise that you are missing out! Not only is this meal so full of flavour, it also is very healthy & loaded with veggies, good proteins & fats, and is a meal that can be made for breakfast, lunch or dinner. If you’d like to remove the bread from this meal to make it lighter on the carbs, you definitely can and it’s still enjoyable, but that being said, please remember that carbs are good for you*! Another bonus of this recipe is that it is so simple to make. All in all, if you’ve never tried shakshuka, I highly recommend it.

The moment the cool weather hits, I instantly start craving soups for every single meal, well… except for breakfast. There’s nothing like enjoying a hot bowl of soup when the weather hits below 15 degrees Celcius, if you ask me. Normally, I’m not a huge fan of tomato soup, but when my family and I tried this soup, it completely changed my views on if tomato soup is good or not! Now, if you’re like me, and don’t like tomato soup, I’m willing to bet this comes from only having canned, store-bought tomato soup, and I want you to give this one a chance! Also, let me give you a tip – try this with a grilled cheese (and put a few leaves of basil in it too!) on the side & dip it in this soup, and thank me later.

Alright, I’ve got to be honest, it’s been a hot minute since I’ve made this recipe, and when I did make it, I was still eating seafood & fish, so I made this meal with shrimp. That being said, it was so good, and goes to show how adaptable this recipe is, and I don’t know about you, but I love any recipe that makes it easy to add, remove or adjust as necessary, because well, let’s be honest, we all require different things & we all like different things! This specific one is perfect for anyone who wants to give jambalaya a try, but aren’t really big on seafood, so you can have it completely vegan, or add in sausage or another type of meat - whatever works for you!

Last, but certainly not least, another recipe that has mushrooms in it. I know mushrooms aren’t for everyone, but you could so easily swap them out in this meal. My favourite part about quiche is not only that it’s super healthy, can be served for breakfast, lunch or dinner, but also that it’s so customizable to whatever you like. You can add in as many veggies or meats as you’d like, and it’ll almost never turn out badly, I mean, as long as it’s cooked properly, LOL! So, as much as I’m linking a recipe, take this as a guide, and not so much a specific map to follow - add in whatever ingredients you want that you think you’ll enjoy & try not to eat the whole thing yourself.
