Halloween Inspired Dinner Ideas

I don’t know about you, but when it comes to holidays, I love to go all in on the theme, and completely just go for it, and that includes making a meal that’s fit for that holiday. I particularly have a soft spot for Halloween too, so with the spooky holiday quickly approaching, I figured why not share three of my favourite Halloween-inspired dinners that are easy to make and equally spooky!

Chicken Boo-dle Soup

First up is this chicken “boo-dle” soup from Morgan Manages Mommyhood. This is a great option for those of us who live in cooler climates where come Halloween night, you have fond memories of having your costume absolutely ruined by having to wear a coat over it. Of course, since I am vegetarian, and eat vegan as much as possible, this is an recipe that can easily be made with meat, or without. Just swap the broth for either vegetable broth or vegan chicken broth, chicken for white beans & black bow tie pasta to either a regular pasta, or a shaped Halloween pasta that is not black*.

* Black pasta is usually died with squid or cuttlefish ink, making it not vegan!

Stuffed Jack-O-Lanterns

Next up is a personal favourite of mine, a stuffed pepper that’s cut up to look like a jack-o-lantern from Everyday Jenny! This is what I’ve made every year for Halloween for the past 2 or 3 years now, whether it be for lunch or dinner. I know you may be thinking cutting out the jack-o-lantern features may be tough, but I promise it’s not — just make sure you use a small, sharp knife & be careful! This is also another recipe that can easily be made vegetarian or vegan by swapping the meat for a substitute!

Jack-O-Lantern Cheese Quesadillas

Last, but certainly not least are these jack-o-lantern cheese quesadillas from One Little Project. This is a really great option if you’re wanting to serve your kids a Halloween-inspired dinner, but want to keep it simple & something they like. It’s also another great customizable option for the adults so you can add some more vegetables and flavours in there that kids may not necessarily love! I also might even give this one a try for lunch this year, and cut out a ghost or bat shape instead of a jack-o-lantern. All-in-all, this entire recipe is a cute, fun and very easy to personalize one to make that everyone will enjoy.
