Plant-Based Cheesy Mushroom Pasta
If you follow me on Instagram, you might have seen one of my reels recently where I shared how I make a plant-based cheesy pasta, and truth be told, I make this pasta recipe pretty frequently because it’s easy, yummy, and doesn’t take long to make! What more could you ask for in a week night dinner, right?
If you’ve seen any recipes that I’ve ever shared on my blog before, I’m not a big measurements girl, so I’ve given you approximate measurements to go off of and make your life just a bit easier, haha! So, let’s get into this recipe!
Plant-Based Cheesy Mushroom Pasta
Yields 2-3 Entrée Servings
Ingredients
- 1/2 box of Spaghetti
- 2 tbsp of Olive Oil
- 2 cloves of Garlic, minced
- 15 White Mushrooms, sliced
- 2 large handfuls of Spinach, optional
- 1/3 cup of plain Oat Milk
- 1 cup of Nutritional Yeast
- 1 tsp of Cornstarch
- Salt & Pepper, to taste
- Reserve 1/3 cup of Pasta Water
Directions
- Bring a large pot of water to a boil. Once boiling, add spaghetti, and cook according to the box instructions. When finished, strain and leave the spaghetti in the strainer while you use the pot to cook the remaining ingredients.
- Lower the burner to medium heat. In the pot, add 2 tbsp of olive oil & your 2 cloves of minced garlic. Cook for about 1 minute, until it is fragrant. Add mushrooms and cook for about 5 minutes, until softened, stirring occasionally. Add spinach and cook down about half way, stirring occasionally.
- Once your spinach and mushrooms are cooked down, add your spaghetti back to the pot, as well as the oat milk. Immediately after, add nutritional yeast, cornstarch and reserved pasta water and mix well. Allow the combination to simmer for a bit, to allow the oat milk to reduce a bit and the cornstarch to help adhere the oat milk & nutritional yeast to the pasta.
- Mix everything together really well, and serve. Top with salt and pepper, and any top with fresh basil if you'd desire, and serve.
